Ingredients
1 tbsp groundnut oil
1 large onion, finely chopped
2 tbsp tomato purée
2 tbsp mango chutney
1 tbsp curry paste (if you like it hot, add 1 tsp chilli powder)
salt and black pepper to taste
4 cooked chicken breasts, cut into small pieces
1 small jar low fat mayonnaise
2 small cartons low fat natural yoghurt
Method
Fry the chopped onion in the groundnut oil until golden.
Add the tomato purée and mango chutney and fry for about 2-3 minutes.
Add the curry paste and fry for a further minute.
Take off the heat and stir in the chicken pieces until they are coated with the curry mixture.
Transfer to a bowl, cool slightly and stir in the mayonnaise and yoghurt.
