300g red split lentils
2tbsp vegetable oil
1/2 teaspoon cumin seeds
2 tsp tumeric
1 onion chopped
15g fresh root ginger grated
2 green chillies - deseeded and chopped
2 garlic cloves - crushed
1 tomato - chopped
1/2 tsp garam masala
Place lentils in a pan with 750ml water, bring to boil and simmer 5-10 minutes until smooth
Cook Rice, if required
Place vegetable oil in a pan over a low heat.
Fry cumin seeds for 1 minute
Add onion and turmeric and fry for 5 minutes
Add ginger, chillies and garlic and fry for 1 minute
Add tomato and simmer for 3 minutes
Tip in the lentils and simmer for 10-15 minutes
Stir in garam masala and season
Garnish with onion and ginger
Serve with rice or naan bread
