Olive oil for frying
500g new potatoes
250g chorizo sausage
4 roasted peppers
1 large onion
2tsp smoked paprika
4 large free range eggs
Handful of fresh parsley - chopped
Boil potatoes for 8-10 minutes
Cook peppers and onions until soft - remove from pan
Cut the potatoes into bite sized pieces
Heat a splash of olive oil in a deep frying pan, add potatoes until they start to colour
Add chorizo, fry for a few minutes
Add peppers, onions and paprika to the pan and stir to incorporate
In a separate bowl , blend the eggs, season with salt and pepper
Add the parsley to the eggs
Add the eggs to the pan and cook on a medium heat for about 10 minutes - until the egg starts to set around the edges
Place the pan under a hot grill for 2-3 minutes until golden
Serve with a salad
