Serves 4
500g dried spaghetti
100ml extra virgin olive oil
1 large bunch of parsley, stalks removed, leaves finely chopped
5 cloves of garlic, peeled and finely sliced
2tsp chilli flakes
1 fresh red chilli, finely sliced – seeds left in
Add prawns if required
Bring a large pot of water to the boil. When boiling add a good pinch of salt. Boil your spaghetti for 1 minute less than the packaging suggests to ensures al dente cooking.
While the spaghetti is cooking, pour the extra virgin olive oil in to a large, high sided frying pan and add the chopped parsley, garlic, chilli flakes and fresh chilli. Turn the heat to medium high underneath and stir as the ingredients begin to sizzle. Let the ingredients fry for about 1 minute then turn off.
Add cooked prawns.
As soon as the spaghetti has had its time, turn the heat back on under the garlic and chilli pan and using a pair of tongs transfer the cooked noodles to the pan and toss all together.
Serve immediately
