Serves two
1 onion finely chopped
1 clove of garlic
30g of butter
120ml double cream
2x 110g of salmon
150g of tagliatelle (75g per person)
200g spinach
2 eggs
Preheat oven to 220°C
Gently soften onion and garlic in the butter for 5-6 minutes.
Add cream and heat through
Cook salmon (place on plate, cover with clingfilm and cook at 100% in microwave for 2 minutes)
Break salmon into large chunks ad add to sauce
Stir in spinach and cook for 1 minutes
Add pasta and stir
Lightly beat eggs and stir in
Put mixture in oven proof dish and bake for 12-14 minutes
